Our craft
Our udon dough rests for a full 24 hours before cutting — the time it takes to develop the chew and clean swallow of authentic Sanuki-style udon. We blend several premium wheat flours by hand for the right tension between firmness and give.
うどんの生地は、切る前に丸 24 時間かけて熟成。Sanuki スタイル本来のコシと、すっとした喉ごしに必要な時間です。コシと弾力のバランスを取るために、複数の小麦粉を手作業でブレンドしています。
Four ingredients only: bonito flakes, dried sardines, iwashi, and kombu kelp. Drawn slowly under controlled temperature. No MSG. No premade base. Umami built up, layer by layer.
